When my family and I visited Chicago, we had Chicago-style Hot Dogs!

Sport Peppers (We couldn’t find these so we substituted them for Pepperoncini Peppers!)

Steps to making this incredible finger food:
First, you start by cooking the hot dogs. Once you have done that, you can prep the vegetables. Start by dicing, or mincing the onions and then slice the pickles into a Julienne (Julienne means in sticks) shape. After you have cut those two ingredients, slice the tomatoes into circles! Now, it is time to assemble the hot dogs! Start by getting out a hot dog bun, and place the hot dog inside!
Then, get out mustard and ketchup. Spread a scoop onto the hot dog, then get your white onions and place them on top, once you have done that, get some relish and put a scoop on top, and then, place a pickle on the inside of the bun, and the tomato goes on the other side! Then enjoy!!!
I absolutely love this hot dog! There are so many different flavors that come together so nicely in the end! I think this would be a good buffet at a party or get-together! Also, it could be just a fun dinner or lunch for you or your family! You could also get a vegetarian hot dog!

When we were in the Cotswolds we had Bangers and Mash at the White Horse!

Steps to making this AMAZING Dish:
To start, you need to get out your Bangers! Then, cook them in the oven for 30 minutes! When my sous-chef/My dad took them out of the oven, they weren’t fully cooked, so we took out our new non-stick pan, sprayed a little olive oil, and cooked them on the stove for a couple more minutes. While mainly he was doing that, I was making the mashed potatoes! I started by boiling them. Then, I put them in a bowl and tried to peel the skins off with a fork and a knife.
It actually worked well! Once I finished doing that, I took a chunk of butter and flopped it into the bowl with the mashed potatoes! I let the butter melt while mixing it. I crumbled the potatoes by hand, but if you have a hand mixer, I would suggest using it! After the butter and potatoes had melted together, I added some buttermilk to make it creamier. Now, you don’t have to do this if you don’t want to. I used it to make the mashed potatoes creamier. Then, all you have to do is keep it warm until dinner! 😂
I. Love. This. Dish! It is SO amazing! The sausages were cooked PERFECTLY and the Mashed Potatoes were so creamy, and buttery. So good! If my family and I go to the Cotswolds again, I am going to order this dish again!

When we went to the Cotswolds, we ate Scotch Eggs at a pub across from where we stayed!

Steps to making this delicious dish:
First, to make this dish, you need to know where I got this dish. When we were in the Cotswolds, we were staying in a place right across from a pub! One night, my parents went on a date across the street, at the pub! My older brother “babysat” my younger sister and I. Don’t worry, our mom asked us to go over to see them at the pub 10 minutes later! 😂 When we walked across what I am calling a street, was actually just some gravel, connected to a street and when we got there, we ordered Scotch Eggs! That was the inspiration for this week!
This dish is a hard-boiled egg, with ground pork, wrapped around it, me and my sous chef made a mustard sauce that we had at the pub! To start, you need to boil the eggs. Once you have finished that, Get a big bowl, and mix together, ground pork, onion powder, garlic powder, and salt. Then, make the pork mixture into patties. Then, wrap the pork patties around the hard-boiled eggs.
Once you have done those steps, get out two plates, or containers and one bowl. Crack one or two eggs into the bowl, pour some flour onto the plate or container, and then pour some breadcrumbs onto the plate or container. First, dip the pork eggs into the raw egg, then cover in flour and cover in breadcrumbs. Make sure that when you do this, make sure to fully cover in flour egg, and breadcrumbs. Then, put foil onto a sheet pan and place the eggs onto the sheet pan! Let them cook in the oven.
While the Scotch Eggs are cooking, it is time to make the dipping sauce! The dipping sauce is really easy to make. It is a mustard base and is really good with eggs! First, put some mustard (any kind works) into a bowl and add some Red Wine Vinegar. Mix it, taste it, season it however you want! When the Scotch Eggs are done, take them out, take a little bit and if they are undercooked, cook them on the stovetop for a couple of minutes. then, enjoy!
These Scotch Eggs are so good! The pork is on the outside, but when you cut it, through the middle there is an egg! It is such a good surprise! When I go to the Cotswolds again, I am getting this again!

A Cubano is a Cuban sandwich with Ham, Cheese, Pork, and Pickles with some mustard! It is so delicious and I am ready to make it my own!
Ingredients…
Ham
Shredded Pork
Swiss Cheese
Pickles
Mustard
Onions
Bread (I would suggest Italian bread or French Bread and not a baguette.)
Steps to making this mind-changing dish:
First, take out the Italian or whatever kind of bread you got, and slice it in half, long ways. If you want to make a big huge Cubano, go for it! I made sandwiches for 4 people so I had to split it up 😂. After you have cut the sandwich, get some butter and spread it onto the bread. Then, get out the Swiss Cheese and lay a couple of pieces onto the sandwich. Remember not to put too much because Swiss Cheese had a strong flavor and can overpower the other ingredients easily. Once you have finished putting the Swiss Cheese on the bread, then you take out the Ham and put some pieces on the other piece of the bread.
Then, take out the Shredded Pork and put it on top of the ham side of the bread. Then, slice up some pickles and onions and put them on the Swiss Cheese side of the sandwich. Once you have done all of this, add some mustard on both sides. Now, all the ingredients are on the bread, put the bread in a preheated oven until the cheese melts. This will not take long.
I have only had this sandwich like three times on my trip all around Florida and back, and I can just say that this sandwich is so, GOOD! I will absolutely have this sandwich again! It is also pretty simple to make!

While I was in Spain, I and my family took a paella-making class! The paella we made in Spain was so delicious! There were shrimp, rice, mussels, and so much more yummy foods! Also, if you go to the Portfolio Page you can see the pictures of the paella I made and the one I made in Spain! This recipe was made vegetarian and without rice, but we also cooked some chicken to add if you wanted it to be non-vegetarian and you can substitute the cauliflower for rice if you’d like.

Steps to making this modified version of Spanish Paella:
First, oil the pan you will be cooking the paella in. Once you have greased the pan, dice up onions and cook them in the pan. Once the onions have browned, then mince some garlic and throw them in the pan! Then add tomatoes and cook for a couple of minutes. Once the tomatoes look good and slightly cooked, add all of the chicken stock! if you’d like, add saffron which is a type of spice! Let simmer for 15-20 minutes or however long you want! The longer you simmer it the thicker it will get. Eventually, the tomatoes will completely break down. Season to your taste and eat! (Season to your taste means to season to what tastes good to you!)
I love this paella very much! I think that the saffron that I used made it taste like Spain a little bit. I know that in these times we cannot go to Spain and travel as much as we might have before but, being able to make these recipes from me and my family's travels is so great and reminds me of our fun travels so much and how much I miss it. I do hope that we get to travel and get out more soon!

While I and my family were traveling in Spain, we had Caviar. We didn’t just eat caviar straight, but we had it on oysters. So, I and my trusty sous chef (My mom) decided that we were going to put caviar on cucumbers with tuna, hard-boiled eggs, and an egg blini.
Ingredients…
Any type of Caviar (We used a Salmon and a Yellow Lump-Fish kind)
Cucumbers
Eggs
Canned Tuna
Red Onions
Salt (Optional)
Pepper (Optional)
Oil
Baking Soda
Almond Flour
Steps to making these amazing dishes:
Cucumber and Tuna with Caviar: First, to make the Cucumbers and Tuna with Caviar, cut up the cucumbers into a slanted shape. Then, put tuna into a bowl and mince some red onions, and put them in as well. Once you have combined the tuna mixture, place the tuna on top of the cucumbers, trying not to overflow and saving room on the cucumbers for the caviar. Once you have finished the first steps, get out a pearl spoon. Rubber-only spoon because the metal on a spoon or fork messes with the taste of the caviar. Once that is done and you have your rubber spoon out, scoop a little bit of caviar onto the cucumbers. If you got two or more kinds, I would suggest either dividing the cucumbers into however many groups of caviar you have and placing each caviar onto each one. I only got two different kinds to make it less confusing. Once you have finished making the cucumbers, place them in the fridge to keep them cool.
Hard-Boiled Eggs with Caviar: First, to make the Hard-Boiled Eggs with Caviar, boil the eggs. To boil the eggs, you need to boil a couple of cups of water and get it to a boil. Once you have finished doing that, carefully place in eggs with a spoon. While you are doing this, try not to crack the eggs. Then, leave them in the water for 11 minutes. Once they are finished cooking in the water, then take them out of the water and let them cool. Once they have cooled, crack the eggs. Then cut them all into halves or fourths. Carefully put the caviar on top with a pearl spoon and cover, then put them in the fridge to save them!
Caviar on an Egg Blini: First, to make the egg blinis, start by mixing, egg, almond flour, salt, apple cider, oil, and baking soda. Once you mixed that together, bake it in the oven. Once it is finished, let it sit for a couple of minutes. Once it is done sitting, get a small cookie cutter and cut the blini into a spoonful of caviar onto the egg blini with a pearl spoon.
Now enjoy! I love all of these! I especially love the cucumber, tuna, and caviar kind. It is such a good mix! The egg blini also was very interesting and good! The Hard-boiled eggs are just as good as well!
