The World of Cooking According to My Great Grandmother

This section of the website is about my Great Grandmother, Theresa Galicki. She was an amazing mom, grandma, great grandma, and COOK. She gave birth to eight children and raised seven children in Cleveland, Ohio, so she made many meals. Oh, she was Italian and did I say a great cook. 

Unfortunately, she passed away in 2017 at the age of 92. Not only do her stories live on with all of the kids and grandkids, but so does her food. She made an amazing recipe book with over 200 different meals of all kinds. I want to honor my Great Grandmother by inspiring friends and family with her delicious meals because she was an inspiration to me.  I know that she is watching me from up in heaven.

I started my cooking adventure on September 29, 2020. My goal was to finish 50 recipes from her homemade cookbook by the end of the year. I achieved my goal and completed the project on November 15th, 2020.

  • Tonight for dessert I made this cake!

    Steps to making this amazing and delicious cake:

    First, what you do is you mix together vanilla, flour, cold water, cocoa powder, and sugar. Whisk it together and then, add cold water and cocoa powder, and sugar and whisk it together again. Then, add the sugar, cocoa powder, and cold water. Then, pour it into a pan and bake it in the oven, once it cools add the frosting and enjoy!

    I absolutely love this cake, it is wonderful! I will definitely have this cake again because it is so good and very easy to make!

  • Tonight for dinner I made Bruschetta!

    Red Onions

    Cilantro

    Steps to making this delicious dish:

    First, dice the tomatoes, onions, and cilantro. Add lots of olive oil into a container and toss in the diced ingredients. Mix it all together and then enjoy!

    I love this bruschetta because it is so simple, yet tastes amazing!

  • Tonight for dinner I made shredded potatoes!

    Steps to making these great potatoes:

    First, boil the potatoes. Then, shred them with a fork. You can serve this with the tenderloin or any meat really.

    I really like these potatoes, they are great and I will definitely have them again!

  • Tonight for dinner I made a Grilled Beef Tenderloin!

    Steps to making this amazing dish:

    Firstly, lightly cook the meat in a pan so it becomes softly browned. Then, cook it in the oven until it is fully cooked through.

    I really like this dish, I would definitely have this again!

  • Tonight for dinner I made Wedding Soup, yum!

    Small Type of Pasta (I used the macaroni)

    Scallions

    Chicken Stock

    Steps to making this amazing soup:

    First, cook the macaroni in a pot until it is fully cooked through. Then, add the chicken stock and scallions. If you’d like to, you can season it with pepper and salt.

    I really love this soup. It is almost a simpler version of chicken noodle soup. I will definitely have this again.

  • Tonight for dinner I made a baked fillet of fish!

    Steps to making this delicious fish:

    First, marinate the salmon fillet in sour cream, milk, and butter. Then, cook it in the oven until fully cooked. Finally, enjoy!

    I will definitely have this dish again, it is so good!

  • Today for lunch I made a Zucchini Casserole, yum!

    Steps to making this amazing casserole:

    First, take out the middle of the zucchini and dice it. After, dice the onions. Once you’ve finished doing that, put it in a greased pot and put it all in a pot. Then, cook it in the oven!

    My opinion on this casserole is that it is so good, I will definitely have this again!

  • Today for lunch I made gnocchi!

    Marinara Sauce

    Parmesan

    Flour

    Steps to making this delicious pasta:

    First, boil the potatoes and peel the skins off. Then, mash them into a pot and make the dough by adding flour and butter.

    Then boil it until cooked fully. Pour marinara sauce over it and sprinkle parmesan generously.

    I love this pasta so much! It is so good and I will have it again!

  • Tonight for dinner I made crab meat bisque, yum!

    Steps to making this amazing bisque:

    First, on low heat cook the crab meat while adding heavy cream and butter. Let it cook then pour into a cup and eat!

    I like this bisque a lot, I can’t wait to try it with lobster next time!

  • Tonight for dinner I made buttery dinner rolls, amazing!

    Ingredients…

    Flour

    Milk

    Eggs

    Butter (a lot!)

    Steps to making these buttery and delicious diner rolls:

    First you have to make the dough, do that by mixing flour, eggs, milk and butter together. Once the dough has formed, melt butter and pour on top. Then, let sit for 1 hour and 30 minutes. After they are done sitting, shape them and put on a pan, then cover them and let rise for 1 hour. Once that step is done, pour more butter on them and bake! After that pour even more butter on top.

    I ABSOLUTELY LOVE THESE DINNER ROLLS! They are so delicious and I will definitely make them again.

  • Tonight for dinner I made chicken royal, yum!

    Steps to making this amazing dish:

    First, place the chicken thighs in a pan. Pour olive oil and salt on top and cook it in the oven! My opinion on this chicken is that I would’ve put less oil on it but it is still very delicious!

  • Tonight I made Fruit Drop Cookies, so good!

    Maraschino Cherries

    Flour

    Butter

    Vanilla

    Milk

    Steps to making these delicious cookies:

    First, cream together butter and sugar. Beat in the egg and vanilla. Then, combine the flour and milk. Mix all together to make dough and add the cherries. Then bake!

    I really like these cookies because they aren’t too sweet so the cherries really makes them sweeter. I would definitely have these again.

  • Tonight for dinner I made onion rings in a beer batter!

    Beer

    Onions

    Steps to making these onion rings:

    First you have to make the batter. Do so by combining flour and beer. Let the mixture sit for 1 hour. Before prepping the onions, heat up oil in a pot. Make sure it is really hot, so you can fry the onions quickly. Break apart an onion into rings. Then, dip them into the batter and put in the hot oil pot and fry them until they are browned. Then eat!

    Usually onion rings aren’t my favorite, but these onion rings are really good! I will definitely have these again.

  • Tonight I made my Aunt Sandy’s Favorite Cookies, SO amazing!

    Butter

    Sugar

    Egg

    Vanilla

    Flour

    Baking Powder

    Salt

    Steps to making these fabulous cookies:

    First, cream together butter, sugar, egg, and vanilla. After that, let it sit to the side. While it is sitting, mix together, flour, baking powder, and salt. Then mix both mixtures together to make the dough. After you made the dough, scoop up some and shape it. (I shaped them all into hearts!) I used an ice cream scooper to make them all even. I shaped them with a cookie cutter and put them in the oven to cook!

    My opinion on these cookies is that they are amazing! I love them so much and I will definitely make them again!

  • Tonight for the cookies above I made Buttercream Frosting!

    Confectioner’s Sugar

    Steps to making this wonderful frosting:

    To make the frosting all you have to do is beat butter, confectioner’s sugar, vanilla, and milk together. Then take the cookies out when they are cooked all the way and spread on some of the frosting. I dyed it light pink for the first two batches and darker pink for the third batch.

  • Tonight for dinner I am making Fettuccine Alfredo! I decided to use Ravioli Dough instead of fettuccine because it is so easy yummy! Here is how to make the dough!

    Water

    Olive Oil

    Steps to making this easy dough:

    First, I want to tell you that if you are cooking for 5 people I would for sure triple this recipe. Starting with the dough, you start to mix together in a bowl flour, egg, salt, olive oil and a little bit of water. Once the dough is rolling off of the bowl, Form it into a ball.

    Also, I would suggest to use your hands instead of using a whisk. After that, roll it out with a rolling pin. Make sure the surface is floured. Then, cut it into strips. I shaped it like spaghetti. After that, boil water and cook for about 5 minutes. (Fresh pasta cooks way faster than packaged pasta.) Then, enjoy!

    First, boil the potatoes until they are fully cooked and cut them up. Then, add scallions and eat! This salad is great because it is so easy.

  • Tonight for dinner I made Chicken Paillard, yum!

    Steps to making this amazing dish:

    When I made this dish, we cooked the chicken with the bone still in. We did this because when we cooked the Sesame Chicken (Recipe 29), it was very moist. I decided to cook it the same way! First, you season the pepper and salt. Then, cook it in the oven.

    My opinion is that this dish is very good, I like it a lot! I would definitely recommend this for an easy weekday night! I would definitely make this again!

  • Today for lunch I made a Cauliflower Casserole, delicious!

    Ingredients…

    Cauliflower Rice

    Onions

    Mushrooms

    Olive Oil

    Salt

    Pepper

    Steps to making this delicious casserole:

    First, sauté onions and mushrooms in a pan. Then, add some cauliflower rice. Cook it until the cauliflower rice has been fully cooked, or is lightly browned. After that, grease a small pot and pour the mixture into the pan. Place some parmesan shreds over it. Once you’ve completed that, crack some eggs on top to make it stick together better. Then, put it in the oven!

    I am not a big fan of casserole’s, but, I think that this casserole is amazing! I love the taste of the onions and mushrooms together, and the cauliflower rice adds lots of texture! It is also very easy to make! I love it and will definitely have this again!

  • Today for lunch today, I made some Ice Water Crackers!

    Ingredients…

    Ice Water

    Saltine Crackers

    Steps to making this complicated recipe:

    I am going t tell you know, this is my first fail of a recipe… Start by laying out saltine crackers across a sheet pan. Then, get ice cold water and carefully pour it over the saltines. Don’t make the ice cubes hit the crackers or go onto the pan. After that, take them off the pan and pat them dry in a paper towel. Once you’ve completed that, grease the pan with olive oil. Put the crackers back on the greased pan and bake them in the oven.

    My opinion on the ice water crackers is I think they turned out different then my great grandmother would’ve made them… Maybe more practice would help with the taste!

  • Tonight for dinner I made a potato salad!

    Ingredients…

    Boiled Potatoes

    Hard Boiled Eggs

    Scallions

    Mayonnaise

    Pickles

    Salt (Optional)

    Pepper (Optional)

    Steps to making this delicious salad:

    First, boil the potatoes in a pot and chop them up. You don’t want them too small or you won’t be able to taste the potatoes in the salad. After boiling and slicing up the potatoes, boil the eggs. Then cut the eggs into fourths. Place the eggs in the bowl with the potatoes. After that, add mayonnaise and scallions. Then, mix it up, taste it, and if it needs any seasoning. (I used salt and pepper).

    I really like this salad. It is unique and different than your regular salad. It is a good lunch salad. I will definitely make this salad again!

  • Tonight for dinner I made some Sesame Seed Chicken, so good!

    Ingredients…

    Chicken Breasts (With bone still in)

    Sesame Seeds

    Pepper

    Salt

    Eggs

    Half and Half Milk

    Olive oil Spray

    Flour

    Baking powder

    Steps to making this incredible chicken:

    You may be asking, “Why should the chicken have the bone in?” Well, my Great Grandmother said in the cookbook, “When the bone is still in the chicken, it adds so much more flavor!”. I want to tell you know it definitely does.

    To make this chicken you first have to take the skin off! After that, pour the milk and eggs into a shallow dish, whisk it. In a different dish, put in flour, baking powder, sesame seeds, pepper and salt. (We skipped using flour or baking powder.) Place the chicken in the milk and toss around. Then, dredge it in the sesame mixture and place in a greased pan. Do it for the rest of the chicken breasts. Then, cook!

    My opinion on the chicken is that I think it is amazing! It is so moist and I think the bone has something to do with it. I would definitely have this again!

  • Today for dinner I made a Cauliflower Rice Roesti, yum!

    Ingredients…

    Eggs

    Shredded Parmesan

    Potatoes (I used Cauliflower Rice instead

    Olive Oil Spray

    Steps to making this phenomenal dish:

    First, get a pan, spray olive oil on it and pour in the cauliflower rice. Cook until it is lightly browned. I added two eggs on top so that it would stay together better. After that, add some parmesan and let the cheese melt only on the top. Place a plate on top and fry to flip it onto the plate. Scrape it into the pan carefully. (I had my trusty sous chef do this part.) It cracked a little bit, but once you cook the other side and put more cheese on, you can reshape it while on the plate.

    My opinion on the Roesti is… I LOVE IT! It is so delicious. It is somewhat difficult to make, but it is work the hard-work! I will definitely cook this for a weeknight meal again! I can’t even imagine how amazing it would taste if it was with potatoes!

  • Tonight for dinner I made a pot roast!

    Ingredients…

    Beef Chuck Roast (4 Ib.)

    Celery

    Carrots

    Onions

    Garlic

    Coca-Cola (I used water.)

    Salt

    Pepper

    Steps to making this easy meal:

    First, cut the vegetables. Then, put them into a crockpot. After that, add the chuck meat. If you do not own a crockpot them you can cook in an oven. The recipe calls for Coca-Cola, but we used water. Pour the water or Coca-Cola into the crockpot and let the ingredients cook for 4 hours! After that, take it out and cook it in the oven for a few hours.

    My opinion on the Pot Roast is that, I would like it more if the meat shredded off. Instead, we had to cut it with a knife. Other than that, the vegetables were so good! I loved them!

  • Today, I made cabbage rolls, yum!

    Ingredients…

    Cabbage

    Ground Beef (We used cauliflower rice instead)

    Marinara Sauce

    Steps to making these healthy rolls:

    First, you have to steam the cabbage in a deep pot. Then, dry the cabbage only for a few minutes. After that, take out the middle. Then, place the cabbage onto a plate. But make sure to be very careful with the steamed cabbage, it is very fragile. Instead of using meat, we used cauliflower rice because we didn’t have any ground beef. We cooked the cauliflower rice with marinara sauce and spices.

    Put a little scoop of the cauliflower rice into the cabbage leaf. Then, spread some marinara sauce onto the bottom of a pan a couple inches deep. Once you’ve completed that, place the cabbage rolls into the pan. Then cook them in the oven! After that, let them sit for a couple minutes, so they can cool. Lastly, enjoy!

    My opinion on the cabbage rolls is, I think they are amazing! I love the taste! I would definitely recommend this for a nice cozy, rainy night! I will definitely have this again!

  • Today for dinner I made the wonderful Chicken Cordon Bleu!

    Ingredients…

    Chicken Breasts (We didn’t have any so we used chicken patties)

    Blue Cheese (Any kind works)

    Flour

    Egg Wash

    Bread Crumbs

    Prosciutto

    Steps to making this wonderful dish:

    First, what you have to do is prep. Get three shallow bowls, put flour in one, egg wash in the other, and bread crumbs in the last one. Get parchment paper and a chicken breast, get a rolling pin and roll it down to about 1/4 inch thick. We used chicken patties and I would NOT recommend this, use the chicken breasts, or else they will fall apart. Lay a piece of prosciutto on top. (We skipped that part.) Then sprinkle blue cheese on it. roll it up with your hands so that it is in a shape of a burrito. first roll it around in the flour, then in the egg wash, then in the bread crumbs and put it on a plate, secure it with a toothpick. Then put in fridge for 1 hour.

    Then bake it in the oven for about 1 hour. We served this with rice, beans, some lettuce, tomatoes, and brussels sprouts. My opinion on the chicken is that I think it would be better with the chicken breast, and would be less messy to prep it. But, the meal altogether was really good!

  • Tonight, for dinner, I made a Cauliflower Marsala. (It was originally called Chicken Marsala but, we substituted the chicken for cauliflower.)

    Ingredients…

    Raw Cauliflower

    Sliced Mushrooms

    Marsala Wine

    Clarified Unsalted Butter

    Olive Oil

    Minced Garlic

    Chicken Broth

    Steps to making this delicious dish:

    This is a great meal for a weeknight because it takes no time! I served this with a soft-leaf salad and rice. First, melt the butter in the pan and add the mushrooms. Then, add the garlic and let cook for a few minutes. Then add the Marsala wine, or as I used sweet vermouth. Then, put in the cauliflower. Then let cook until the vermouth is absorbed. Then serve and enjoy!

    I really love this Cauliflower Marsala. It is very delicious, especially over basmati rice! Yum! If you want the original chicken recipe, ask on the Contact Page and I will email it to you. I will definitely have this again!

  • Today I made a special dessert.

    Ingredients…

    Lemon Juice

    Sugar

    Flour

    Powdered Sugar

    Eggs

    Baking Powder

    Steps to making this special dessert:

    First, you have to make the crust. Do that by mixing flour, baking powder, powdered sugar, and eggs together. Then bake it! Then you have to make the middle! To make the middle, you whisk together eggs, sugar, baking powder, and lemon juice. Then pour in the crust and bake it! After that, if you’d like, just put a little bit of powdered sugar on top! I cut them into bite-size pieces.

    I love these lemon bars, they were so good. I think it was just a bit too eggy though… But other than that, These lemon bars were delicious!

  • Today for lunch I made a delicious Mushroom Toast! Yum!

    Ingredients…

    Thinly sliced Mushrooms

    Butter

    Shallots

    Garlic

    Sourdough Bread

    Chicken Stock

    Steps to making this delicious toast:

    I served this mushroom toast with the Great Hot Sandwiches (below) and lemon bars (above). First, heat up some butter in a pan and then add the diced (diced is small cubes.) shallots, minced garlic (minced is tiny cubes, smaller than diced.) and thinly sliced mushrooms! Let them cook and add some chicken stock. Let the mushrooms absorb the chicken stock and serve!

    I really liked the mushroom toast. it was buttery and went really well on the sourdough bread. I loved it and would definitely have it again!

  • Today I made Great Hot Sandwiches!

    Ingredients…

    Olive Oil

    Sausage Patties

    Ground beef

    Cheese

    Sourdough Bread

    Steps to making this big sandwich:

    I am telling you now, this sandwich is huge if you make it correctly. If you are having company this is good for meat eaters that are starving. First, cook the sausage patties and ground beef in a tiny bit of olive oil. Then once you brown the meat put in the cheese let the cheese melt, then place it on the bread then, put it in the oven, and take it out when the cheese starts to bubble.

    I served this with the mushroom toast recipe below. I think that this sandwich fills you up very quickly!

  • Today, I am going to catch up with really good friends and I want to make a yummy and sweet dish! I have the perfect idea. Can’t wait!

    Marshmallow Cream

    Maraschino Cherry Juice

    Cream Cheese

    Fruit (Strawberries, Grapes, Blackberries, etc)

    Steps for making this sweet delicious fruit dip:

    This recipe is very easy. To make it, all you have to do is put cream cheese, and marshmallow cream in a bowl, then add a little bit of cherry juice. Start with a little juice and if it needs more you can always add more. Then, stir it up, get some fruit, and dig in!

    My opinion on this dip is that it is very good, especially with strawberries, grapes, blackberries, and more! I love it! It is also very easy to make!

  • Today I made, “The Best Pancakes”!

    Ingredients…

    Flour

    Eggs

    Buttermilk

    Vegetable Oil

    Baking Powder

    Baking Soda

    Salt

    Steps for making The Best Pancakes:

    The first thing you need to do is make the batter. Do this by combining the eggs, buttermilk, flour, baking soda, baking powder, and salt together in a bowl. Whisk it together and then heat up a pan and drizzle vegetable oil on it. Then, pour some of the batter into the pan and cook until the outskirts of the pancake start to bubble. Then flip it! Keep doing this with the rest of the batter.

    My opinion on “The Best Pancakes” is that… they are the BEST! I love them so much, especially with maple syrup. Chocolate syrup compliments it well too. I would recommend this for a calm weekend, in your pajamas.

  • Today I made a Chicken Salad! With some spinach. Can’t wait!

    Ingredients…

    Chicken Breasts

    Mayonnaise

    White Vinegar

    Green Pepper

    Green onions

    Celery

    Shallots

    Sweetener

    Salt

    Steps to making this delicious Chicken Salad:

    First, boil the chicken breasts. Then, break the chicken up and put them in a bowl, put mayonnaise on it (or as my Great Grandmother calls it, Miracle Whip), chop up the shallots, celery, and green onions. Put some seasoning on the chicken, and mix it all together.

    My opinion of the chicken salad is that it is very good! It pairs nicely with some spinach on the side too!

  • Tonight I made The Best Lasagna! Can’t wait!

    Ingredients…

    Lasagna noodles (Cooked or uncooked, doesn’t matter)

    Sauce (Mama Disalvo’s is always a great choice)

    Ricotta Cheese

    Eggs

    Parmesan

    Mozzarella

    Crumbled Meatballs

    Steps for making this amazing homemade recipe:

    First, boil the lasagna noodles. Then, spray some olive oil in a pan. After that comes the creative part. Lay out a couple of lasagna noodles in the pan. Then, spread sauce on the noodles, and after that crumble the meatballs onto the noodles. Then, mix ricotta cheese and eggs together. Place that on top of the noodles, sprinkle parmesan, and repeat! Do this until you have filled the pan/dish with noodles, meat and cheese.

    I loved this dish, especially with the meatballs. It is amazingly delicious.

  • Tonight I made my Great Grandmother’s Favorite and Best Spaghetti.

    Ingredients…

    Spaghetti (I used angel hair Spaghetti)

    Ribs

    Ground beef

    Ground Pork

    Parsley

    Eggs

    Salt

    Pepper

    Butter

    Cooking Oil

    Olive Oil

    Garlic

    Parmesan

    Italian bread

    Tomato Paste

    Tomato Puree

    Chopped Tomatoes

    Steps for making this long but amazing meal:

    This is the recipe my great-grandmother is best known for, and I am so glad I was able to make this in her memory. The first step is to, brown the ribs in a tiny bit of olive oil. Then, add the tomato puree, tomato paste, and chopped tomatoes. Stir this mixture around and then make the meatballs. Then, simmer the sauce for about 2 hours.

    I absolutely loved this sauce! Don’t worry, I didn’t eat it plain. I also cooked a side of angel hair pasta, and this sauce goes perfectly with the pasta. My mom said it tasted just like when my Great Grandmother use to make it for her when she was a kid. I will of course make this again.

  • Tonight I made baked beans.

    Steps for making this magnificent dish:

    The first step is, to mix the beans with shallots, ketchup, and sugar. Then put it into a pan and bake. This was a very easy meal. In terms of preparation.

  • Tonight, I am making a special dish called Bourbon Salmon. I’ve decided to make them into tacos!

    Ingredients…

    Salmon

    Bourbon (I am using Knobcreek)

    Tortillas

    Other toppings (Olives, corn, guacamole, etc)

    Butter

    Cream

    Oil

    Steps for making this mouthwatering dish:

    The first step is to bake the salmon. The directions for cooking it are… 375˚F in the oven, for 20-25 minutes. While the salmon is cooking, you have to make the sauce. First, melt butter in a pan. Add oil then, add the bourbon. This has to ignite. I thought it was going to be a HUGE fire like the professionals on TV. But, it is only some steam. After that add onions. Then, stir and add more bourbon. Same thing as before. Just some steam. Then, reduce the heat and simmer. Then serve!

    I think that the salmon is cooked perfectly and the sauce on top gives it a pop of flavor! I love it! This dish is very easy to make!

  • Today, on this cozy and rainy day I made a nice, cozy Hot Milk Cake!

    Ingredients…

    Milk

    Butter

    Eggs

    Sugar

    Vanilla

    Flour

    Baking Powder

    Steps for making this warm Hot Milk Cake:

    First, beat the eggs in a bowl. Then, slowly add sugar. Then, slowly add flour. You can probably imagine the HUGE mess we made! Then, add the vanilla. After adding that, melt butter in a pan and add milk.

    I had to improvise because I only had 1/2 cup of milk. So, I added some water. Then, mix the batter and liquid mixture together. After that, bake it for 35 minutes. While it is baking, make a topping/sauce! You can use whipped cream or, make your own caramel.

    This cake is very light and spongy! It is very dainty and warm. But, also very easy to make and it only takes about one and a half hours!

  • Today I’m made my Great Grandmother’s Sticky Buns (with My Grandmother)!

    Steps to making this yummy dish:

    To make my Great Grandmother’s Favorite Butterscotch Rolls, also known as sticky buns. You have to make sure you have at least a good maybe 3 hours. It is a long process. The first thing you have to do is make the dough. Make sure you have enough flour on your hands or it will stick. Combine flour, eggs, sugar, and vanilla, and then mix it. Then you have to let it rise for about 1 hour. While it is rising make a sweet sauce to go over the rolls. It is made of brown sugar, corn syrup, and butter. Then, once it has risen, cut it in half and roll it into a big rectangular shape. Then, add softened butter all over the top. After that, cover with brown sugar and cinnamon.

    Roll it tightly and cut it into thick rolls… about 2 inches thick. Place it in the sauce that is spread in a pan. Let rise for another 40 minutes. Then preheat the oven and bake for 20 minutes. When you take it out, let it sit and cool for 2 minutes. After that, put a flat pan over it and CAREFULLY flip the dish onto the pan. (I had my Grandma do this part.) Then, eat it!

    The Sticky Buns were so moist and sugary! I loved them! I can definitely tell why these were my Great Grandmother’s favorite!

  • Today I made exquisite Pasta Primavera!

    Spaghetti

    Zucchini

    Steps for making this flavorful dish:

    The first step to making Pasta Primavera is to cook the pasta. That’s the easy part! Next, you have to cook the vegetables in olive oil or butter. (I used both.) You can use any vegetable you like, but I used carrots, zucchini, and shallots! Once those are cooking and sizzling, slowly add the heavy cream, and stir. Then pour it into the pasta. Mix it around until it looks combined.

    My opinion on the Pasta Primavera was that I thought that the vegetables were so perfectly cooked and I loved the creamy and buttery pasta, it is exquisite!

  • Today for a dessert I made flavorsome biscotti.

    Steps to making this flavorsome dessert:

    The Biscotti was very fun to make and we made it with walnuts inside. The dough is very sticky. So, make sure you have enough flour on your hands, so it does not stick! Then shape it into a biscotti shape which is like a big bar. Then, you bake it! Since I made two, I used a cinnamon spread on one and some maple syrup on the other both topped with some more walnuts.

    Since I didn’t let the biscotti harden, it was almost like a cake! SO moist and my favorite one was the maple syrup one!

  • Today for dinner I made the Best Fried Chicken! Yum!

    Steps to making this delicious chicken:

    This chicken is good served with a lot of greens! First, marinate the chicken in a bag. You have to cut the chicken into thick slices. Then, you have to fill it up with milk until it covers all the chicken. Then, put it in the fridge either overnight or for several hours. I marinated it for about twelve hours.

    After the chicken has finished marinating, take it out of the fridge and put flour, baking powder, and salt in a big paper bag. Then shake it until all of the chicken is covered. Get a pan to sizzle by putting in oil then put in the chicken. Wait to flip them until it is golden brown. I served this chicken with broccoli salad, Caesar dressing, French Onion Soup, and Biscotti!

    Steps to making this great dressing:

    This is a very easy dressing to make! First, put the mayonnaise, salt, pepper, oil and eggs into a bowl. I put it in a mason jar, so I could shake it instead of having to mix it with a fork. It was easier. My opinion on the Caesar Dressing is I like that it goes great with romaine lettuce. I just chopped some romaine lettuce, and it was great!

    I made this salad with The Best Fried Chicken, Broccoli Salad, French Onion Soup, and Biscotti!

    Steps for making this delicious meal:

    Chop up 3 onions and put them in a deep pot, I had my trusty sou chef do this job. After, that pour the beef brother into the pot. Then, let it simmer and cook for about 40 minutes. The onions should be more tender than when you first cut them.

    This French Onion Soup is so good! I love it! Especially with the beef stock. I cooked this with a Broccoli Salad, Caesar Dressing, The Best Fried Chicken, and Biscotti!

    Steps to making this sweet but amazing salad:

    First, pick the florets off the broccoli. Then, make the dressing by, mixing the mayonnaise, sugar and cider vinegar. Pour the dressing over the broccoli florets. Then put aside. Keep stirring it with a spoon so that it gets everywhere.

    This salad is wonderful! The broccoli has some sweetness to it! It is amazing! I would definitely have this meal again!

  • This is a good side salad with a great balsamic vinaigrette.

    Romaine Lettuce

    Walnuts

    Olive oil

    Balsamic Vinegar

    Salt

    Pepper

    Steps to making this great side salad:

    First, cut some of the romaine lettuce, and sprinkle chopped-up walnuts on top. Then, to make the dressing, you grab a bowl, or as I used a mason jar and you put olive oil and balsamic vinegar inside. Make sure to add some salt and pepper and shake it.

    Taste it to see if it needs anything else, and pour it on the salad and eat!

  • Today I made a yummy Crab meat Tortellini!

    Ingredients…

    Penne Rigate Pasta (I used Penne Rigate but, you can use whatever pasta you like or have)

    Any type of milk or heavy whipping cream

    Shallots

    Crab Meat

    Butter

    Romaine lettuce

    Broccoli

    Mayonnaise

    Lemon

    Apple Cider Vinegar

    Sugar (for some of the recipes we improvised sweetener for sugar)

    Steps for making this amazing meal:

    So, the first thing to do for the Broccoli Salad is to only pick off the florets from the broccoli head. Then, you make a special sauce to go over it and this included, mayonnaise, sugar, and apple cider vinegar. I mixed that together and poured it over the broccoli and then I put it to the side. Make sure to also later add crumbled or chopped-up bacon on top and walnuts!

    After that, I have to make the dressings for the romaine salad. So, I mix, mayonnaise, sugar, apple cider vinegar, and lemon into a mason jar. I mix it with a fork and then I screw the cap on and shake it until it looks like the mayonnaise has been mixed in with the other ingredients. Then put it in the fridge.

    Then, you need to make the pasta. I used a type of pasta called penne rigate. But, you can use whatever pasta appeals to you. I started by cooking it in boiling water for 11 minutes. But, make sure to check the pasta by eating one of them or, if it is spaghetti then throw one piece on the wall, and if it sticks then great! It’s done!

    After making the pasta I have to make the crab topping that goes over the pasta. To make the topping start by putting butter into a pan and letting it melt. Add the shallots. Then once it starts to lightly boil add heavy cream or any type of milk. Then let it simmer for a few minutes, add crab at the last minute and serve warm!

    My opinion on this dish was, I thought it was so yummy the broccoli salad with the bacon on top and the creamy texture of the sauce poured over the broccoli but also the walnuts added to give it another crunch the combination was just perfect! The pasta was cooked just right and the crab on top was so delicious!

  • Today I cooked a very fancy dinner! The main dish is called Saute de Boeuf a la Parisienne the side dish is steamed broccoli with a romaine salad! Can’t wait! Saute de Beouf a la Parisienne is beef tenderloin tips with a mushroom sauce.

    I am serving it to my amazing and loving family! I first start by getting all my ingredients.

    Steps for making this delicious meal:

    The basic steps are to make a base out of mushrooms, shallots, whipping cream, and red wine. You also cook the beef tenderloin! Once I and my trusty sous chef (my dad) finished making a beautiful dinner with, Saute de Boeuf a la Parisienne, Steamed Broccoli, and cut-up Romaine lettuce. It was, stressful and complicated but also a very amazing and an inspire filled experience!

    The Boeuf a la Parisienne was so creamy with the mushroom and red wine sauce drizzled all over it. The Boeuf a la Parisienne was so juicy and definitely not dry, it was amazing!
